Corn Bean Salad Recipe

Try this instead of nachos!
Makes six servings
Ingredients
- 2 cans of black beans
- 2 cans of sweet corn (2 ears of sweet corn, when available)
- 2 tomatoes
- 1 bell pepper
- ¼ cup finely chopped cilantro
- Juice of a lime or 3 tbsp vinegar
- ¼ cup extra virgin olive oil
- ⅛ tsp cayenne
- Optional: avocado, onion or garlic
- Salt to taste
Instructions
- Open, rinse, and drain black beans and corn, put in bowl
- Toss diced tomatoes and bell peppers in bowl
- Add in cilantro, oil, vinegar, cayenne, salt (and optional ingredients if desired)
- Toss with big spoons to mix
